I made these with 6 inch tortillas and cheddar cheese. Cooked in the tiniest bit of olive oil.
Black Bean & Corn Salad
1 can black beans
corn cut off one leftover cooked ear of fresh corn on the cob
1/2 green bell pepper, chopped
1/4 red onion, chopped
1 tomato, chopped
1/4 cup fresh parsley, chopped
2 tsp olive oil
juice of 1 lime
salt & pepper to taste
