Quick Dinner from the CSA Box:Grilled Veggie Sandwiches & Chick Pea Salad

this was a very simple dinner. We had a couple of small zucchinis. I cut them in thirds, then sliced them long ways. Tossed them with a little olive oil and put them on the grill. Did the same with some red onions. When they were tender, with grill marks, I tossed them with some Balsamic vinegar.

 We made sandwiches on some lovely Ciabatta rolls from Trader Joe's with the veggies and cheeses (Muenster and smoked Gouda), vegan mayo and brown mustard.
 We also had some cucumbers, scallions, and radishes in our box, so I made diced them all up and mixed them with a can of chick peas, some chopped green olives (everything is better with chopped green olives!), a little olive oil and balsamic vinegar.

 We had some watermelon too (not from the share - got it at Trader Joe's - but it was delicious)
 Lovely rolls.
